Sponge Cake - from Rose's Mum

Ingredients:

  • ¾ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup cornstarch
  • 5 eggs, separated
  • ¾ cup finely granulated sugar
  • cream
  • strawberries
  • raspberries
  • confectioner's sugar

Method:

  1. Sift the baking soda and baking powder with the cornstarch twice.
  2. Beat the egg-whites until stiff, add the sugar and beat until dissolved and glossy - about 5 minutes.
  3. Add egg yolks and beat in.
  4. Sift in dry ingredients (third sifting) and fold through, gently but thoroughly.
  5. Pour mixture into two buttered and floured sandwich tins, or one large tin.
  6. Bake in preheated 350 F oven for 25 to 30 minutes.
