Slow Cooker Beef Curry - from Adele

Ingredients:

  • 2 pounds Beef round steak or lamb
  • 1/2 cup Flour
  • 1 tablespoon Curry powder
  • 2 Garlic cloves, minced
  • 1 cup Sultanas
  • 2 Apples - peeled, cored and sliced
  • 1 cup Diced onion
  • 2 teaspoons Salt
  • 1/2 teaspoon Pepper
  • 1 can Beef broth (14 oz)
  • 2 Apples
  • Steamed rice to serve on

Method:

  1. Cut meat into 1-1/2-inch cubes, add 2 apples, unpeeled, cored, and finely chopped. Dry beef well.
  2. Mix flour and curry powder. Coat meat cubes with flour mixture.
  3. Place meat in Crock-Pot. Add garlic, Sultanas, sliced apples, onion, salt and pepper.
  4. Pour in broth and stir to blend.
  5. Cover and cook on LOW setting for 8 to 10 hours or until meat is tender.
  6. Before serving, stir in additional curry powder to taste (up to 1 tablespoon) and chopped apples.
  7. Serve over hot rice. 6 to 8 servings (about 2-1/2 quarts)
  8. I also like to spice it up a few more notches, and serve it with a side of sliced bananas and a dollop of yoghurt.
