Ingredients:
- Salmon Fillet
- 1 large Sweet Potato
- 2 Cloves Garlic
- Olive Oil
- Sweet Basil
- Lemon juice

Method:
- Place salmon in a baking dish, drizzle it with olive oil, basil & lemon juice.
- Crush garlic over it and bake in the oven 350 until flaky and cooked. Remove from oven.
- Peel, boil and mash sweet potatoes.
- Flake the salmon into the mashed potatoes and mix together.
- Heat frying pan with a small amount of olive oil.
- Scoop large spoonfuls of mixture into the frypan and cook on both sides until browned. This mixture doesn't have anything in it to bind it together, so be careful when turning it. It can fall apart easily.
- Serve it up with rice and steamed vegetables, or salad.
