Pumpkin Soup - from Rose

This recipe is not really a recipe. I used to make a fantastic Pumpkin Soup back home, but I always sort of made it up as I went along, and just eyeballed the ingredients. I suggest you just use this recipe as a guide, and go ahead and change anything if it doesn't look right. A couple of people have used this recipe though, with success. I haven't made it since being in the U.S. due to the absence of a Bamix. :)

Ingredients:

  • 2 - 3 pounds Butternut Pumpkin (Squash) or Queensland Blue if you're lucky enough to find/grow one in the U.S.
  • 2 large potatoes
  • 2 medium sized onions (or the equivalent in Leeks)
  • 3 tablespoons butter
  • 3 or 4 chicken or bacon stock cubes
  • Water
  • Nutmeg
  • Salt and Pepper
  • 1 cup cream
  • Milk (1-2 cups)
  • 1 pound bacon pieces, cooked
  • 1 cup grated cheddar cheese
  • Sour cream and chopped green onions for garnish

Method:

  1. Peel and roughly chop pumpkin, potatoes, and onions
  2. Saute in butter for 10 minutes, cover with water, add stock cubes and cook until soft
  3. When cooked, puree with either a blender or Bamix (Bamix is best)
  4. Return to stove, add milk until consistency looks right
  5. Heat, add bacon, nutmeg, salt and pepper (to taste) and simmer slowly for 10 - 15 minutes
  6. Stir in cheese and cream, remove from heat
  7. Serve with crusty bread, and garnish with sour cream and chopped green onions (and extra bacon bits if you like)
