Pikelets - from Fiona

(adapted from Woman's Weekly recipe book)

Ingredients:

  • 1 Cup Self raising flour
  • ¼ cup castor sugar (I have just used the regular stuff here in the US)
  • pinch baking soda
  • 1 egg, lightly beaten
  • ¾ cup milk

Method:

  1. Sift the dry ingredients into meduim bowl.
  2. Make well in centre, gradually stir in egg and enough milk to give a smooth, creamy pouring consistency.
  3. Drop dessert spoons of batter (i use a 1tbspn measure) from tip of spoon into heated greased frying pan; allow room for spreading.
  4. When bubbles begin to appear, turn pikelets, cook until lightly browned on other side.
  5. Serve warm with butter or cream and jam. I also like to put golden syrup on mine.
  6. Makes about 20.
