Ingredients:
- 4 egg whites
- pinch of salt
- 1 cup of sugar
- 1/2 teaspoon vanilla extract
- 3/4 teaspoon vinegar'
- 1/2 pint heavy whipping cream
- sliced kiwi fruit, bananas, passionfruit pulp.

Method:
- Cover baking sheet with alfoil (Dull side up) Using a bowl or plate, trace a 7 inch circle on paper. Heat oven to 250 degrees
- Beat egg whites with salt until soft peaks form. Add 1/3 cup of sugar and beat until dissolved and mix is thick. Add the rest of the sugar a tablespoon at a time. When sugar is dissolved and mix is thick, add vanilla and vinegar. Beat to combine ingrediants.
- Spoon the meringue into a circle marked on foil. Using back of kitchen spoon, spread the meringue out evenly in a circle.
- Bake at 250 degrees for 1 1/2 hours or till firm to touch. Turn off oven and cool the Pavlova in the oven door.
- Whip cream in a chilled bowl till stiff. Select fruits and cut up. Spread cream on pavlova and arrange fruits over the top. Cut in wedges and serve as you would a cake.
