Parmesan Chicken Schnitzel - from Rose

This is one of those recipes that people comment on, again and again. Easy to make, and very tasty.

Ingredients:

  • 4 - 6 Chicken breasts
  • Plain flour
  • 2 eggs, beaten

Crumb Ingredients:

  • 1 ½ cups breadcrumbs
  • ½ to ¾ cup shredded parmesan cheese
  • 1 teaspoon sweet paprika
  • 1 teaspoon crushed garlic or garlic salt
  • 3 tablespoons chopped parsley
  • 1 teaspoon grated lemon rind.

Method:

  1. Flatten 4 - 6 Chicken breasts with meat mallet.
  2. Coat each with plain flour, then beaten egg, and then the breadcrumb mixture.
  3. Place coated chicken in fridge for a while before frying in butter.
  4. Serve with a salad and baked potato.
