Meatloaf Muffins - from Rachel

Ingredients:

  • 1 lb. lean ground beef
  • 1 box corn bread stuffing
  • 2 egg whites
  • 1 cup water

Method:

  1. Mix above ingredients and press into muffin tins sprayed with Pam.
  2. Bake at 350 degrees for 35-40 minutes.
  3. You can also add Ketchup to the mix for additional taste.. sometimes I will baste the muffins with Ketchup as they bake.
