Mango Bread - from Belinda

Ingredients:

  • 180g (6 1/4 oz) butter
  • 1 cup fine sugar
  • 4 eggs
  • 170g (6 oz) can Mango pulp
  • 1/3 cup Sour Cream
  • 2 cups Self-Raising Flour
  • 1/2 cup chopped dried Mango

Method:

  1. Lightly grease a 15cm x 25cm (6" x 9.8") loaf pan.
  2. Beat butter and sugar until light and fluffy.
  3. Beat in eggs one at a time.
  4. Transfer mixture to a large bowl, stir in remaining ingredients.
  5. Spread mixture into prepared pan, bake at 180 degrees C., (350 degrees F) for 50 minutes, or until lightly brown and firm.
  6. Stand bread in pan for 5 minutes, turn onto wire rack and cool.
