Lemon Coconut Slice - from Rose

Ingredients:

  • 3 ounces butter
  • 2 tblspns fine granulated sugar
  • 3/4 cup all-purpose flour
  • 1/3 cup cornstarch
  • 400g can sweetened condensed milk
  • 2 eggs, separated
  • 2 teaspoons grated lemon rind
  • 1/2 cup lemon juice
  • 1/4 cup extra fine granulated sugar
  • 1/2 cup desiccated coconut
  • 1/2 cup flaked coconut

Method:

  1. Grease a 8 x 11 inch lamington pan, line with paper, grease paper.
  2. Cream butter and sugar, gradually add sifted flour and cornstarch.
  3. Turn on to floured surface, knead for 5 minutes.
  4. Spread evenly over base of prepared pan.
  5. Bake in 375 F oven for 15 minutes or until light brown.
  6. Combine condensed milk, egg yolks, lemon rind, and juice in bowl, pour over base, bake a further 10 minutes.
  7. Beat egg whites until soft peaks form, gradually add extra sugar, beat until dissolved.
  8. Add desiccated coconut, spread over filling, sprinkle with flaked coconut.
  9. Bake another 10 minutes or until golden brown.
  10. Cool in pan before cutting.
