Ingredients:
- 2 cups SR Flour
- 1/2 cup sugar
- 1 1/2 tsp salt
- 3 eggs
- 1 1/2 cups milk
- 1/3 cup oil
- dash of vanilla essence

Method:
- Sift the dry ingredients into medium bowl.
- Make well in centre and stir in wet ingredients. Mix until smooth.
- Drop dessert spoons of mix onto heated greased frying pan (I find medium heat and greasing with a little butter works best).
- When bubbles begin to appear on surface, turn and cook until lightly browned on other side.
- Serve with your favourite topping.
- These are really light and fluffy!
