Hotcakes - from Cyn

Ingredients:

  • 2 cups SR Flour
  • 1/2 cup sugar
  • 1 1/2 tsp salt
  • 3 eggs
  • 1 1/2 cups milk
  • 1/3 cup oil
  • dash of vanilla essence

Method:

  1. Sift the dry ingredients into medium bowl.
  2. Make well in centre and stir in wet ingredients. Mix until smooth.
  3. Drop dessert spoons of mix onto heated greased frying pan (I find medium heat and greasing with a little butter works best).
  4. When bubbles begin to appear on surface, turn and cook until lightly browned on other side.
  5. Serve with your favourite topping.
  6. These are really light and fluffy!
