Hot Cross Buns - from Melissa

This is the Hot Cross Bun recipe from the Woman's Weekly cook book - I got it from mum when I was back in Oz in Jan!!

Ingredients:

  • 4 cups plain flour
  • 1 teaspoon salt
  • 30g (1oz) compressed yeast
  • 1 1/2 cups milk
  • 1/2 cup sultanas
  • 60g (2oz) butter
  • 1/4 cup sugar
  • 1 egg
  • 1/2 teaspoon mixed spice
  • 1/2 teaspoon cinnamon

Method:

  1. Cream yeast with one teaspoon each of the sugar & flour, add lukewarm milk, mix well. Cover stand in warm place 10 -15mins or until mixture is frothy. Sift flour, salt, sugar & spices, rub in butter, add beaten egg, sultanas & yeast mixture, beat well.
  2. Cover bowl with clean cloth, stand in warm place 40mins or until mixture doubles. Punch dough down, turn out on floured surface, knead well until dough is smooth & elastic.
  3. Cut dough into 3 equal pieces, cut each piece into 5, making 15 buns in all. Knead each into round shape. Put buns in lightly greased 18cm x 28cm (7in x 11in)lamington tin. Stand in a warm place 10 to 15mins or until buns reach the edge of the tin.
  4. Sift 1/2 cup plain flour with 1/2 cup water, mix to a paste. Fill into small plastic bag with small hole cut across corner. Pipe crosses on each bun.
  5. Bake in hot oven 15-20mins. Remove from oven, immediately brush with glaze made by dissolving, 1 tablespoon sugar, 1 teaspoon gelatine in 1 tablespoon hot water. Cool buns on wire rack.
