Honey Joys - from Belle

Ingredients:

  • 4 cups cornflakes
  • 90 gms butter
  • 1/3 cup sugar
  • 1 Tbsp honey

Method:

  1. Preheat oven- moderate temp - 180 C- 350
  2. Melt butter, sugar and honey together in a span over low heat, stirring occasionally.
  3. Put cornflake sin a large bowl. Pour the warm honey mixture over the cornflakes and mix well BUT gently.
  4. Spoon mixture into patty pans.
  5. Place in oven for 10 mins.

Our variations:

  1. Sprinkle 100's & 1000's or those silver and gold balls over them before going into the oven.
  2. Use wheat flakes instead of cornflakes ( oopsy at the supermarket and I discovered that wheatjoys taste yum yum too)
  3. Make a mixture using 2 cups cornflakes, 2 cups wheatflakes.
  4. For extra honey flavoured ones use double the honey amount.
  5. For a large amount- double the recipe straightaway.
  6. Use muffin pattypans instead of bitty cake pattypans.
