Ingredients:
- 6 eggs
- 1 cup of castor (bakers) sugar
- 1 tbs Golden Syrup
- 1/3 cup of self raising flour
- 1/2 cup cornflour (starch)
- 1 level tbsp Ground Ginger
- 2 tsp Cinnamon
- Whipping Cream

Method:
- Separate the eggs, place the egg whites in a bowl and beat until soft peaks form.
- Gradually add sugar, beating well after each addition.
- Beat in the egg yolks and the loverly Golden Syrup.
- Sift the dry ingredients together twice using a metal spoon, gently fold into the mixture.
- Pour into two well-greased 24 cm (something inches) sponge pans.
- Bake at 350 for 20 minutes or till cooked.
- Turn out gently and allow to cool on wire rack.
- Beat cream and spread evenly over sponge. Enjoy!
