Ginger Fluff Sponge - from Pauline

Ingredients:

  • 6 eggs
  • 1 cup of castor (bakers) sugar
  • 1 tbs Golden Syrup
  • 1/3 cup of self raising flour
  • 1/2 cup cornflour (starch)
  • 1 level tbsp Ground Ginger
  • 2 tsp Cinnamon
  • Whipping Cream

Method:

  1. Separate the eggs, place the egg whites in a bowl and beat until soft peaks form.
  2. Gradually add sugar, beating well after each addition.
  3. Beat in the egg yolks and the loverly Golden Syrup.
  4. Sift the dry ingredients together twice using a metal spoon, gently fold into the mixture.
  5. Pour into two well-greased 24 cm (something inches) sponge pans.
  6. Bake at 350 for 20 minutes or till cooked.
  7. Turn out gently and allow to cool on wire rack.
  8. Beat cream and spread evenly over sponge. Enjoy!
