Ingredients:
- 4 cups plain flour
- 2 tablespoons baking powder
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons sugar
- 3 cups lukewarm water
- 15 grams (1/2 oz) compressed yeast (1 teaspoon dry yeast can be used in place of the compressed yeast-sift it in with the dry ingredients)

Method:
- Sift flour, baking powder, sugar and salt into a large bowl.
- Dissolve yeast in water, add to dry ingredients, beat until smooth.
- Crumpets can be cooked in a lightly greased frying pan or electric frying pan. (If using an electric frypan preheat to 260 degrees F.)
- Lightly grease some egg/muffin/crumpet rings, put them in a pan to heat through. When hot fill the rings three quarters full of batter.
- Allow to cook over LOW heat for approximately 10 minutes or until the surface is covered with holes. Remove rings.
- Cover pan and cook further 2-3 minutes or until the surface has set. Remove from pan, cool on wire rack.
- When cold, toast.
