Crumpets - from Stephanie

Ingredients:

  • 4 cups plain flour
  • 2 tablespoons baking powder
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons sugar
  • 3 cups lukewarm water
  • 15 grams (1/2 oz) compressed yeast (1 teaspoon dry yeast can be used in place of the compressed yeast-sift it in with the dry ingredients)

Method:

  1. Sift flour, baking powder, sugar and salt into a large bowl.
  2. Dissolve yeast in water, add to dry ingredients, beat until smooth.
  3. Crumpets can be cooked in a lightly greased frying pan or electric frying pan. (If using an electric frypan preheat to 260 degrees F.)
  4. Lightly grease some egg/muffin/crumpet rings, put them in a pan to heat through. When hot fill the rings three quarters full of batter.
  5. Allow to cook over LOW heat for approximately 10 minutes or until the surface is covered with holes. Remove rings.
  6. Cover pan and cook further 2-3 minutes or until the surface has set. Remove from pan, cool on wire rack.
  7. When cold, toast.
