Chocolate Crackles - from Belle

The official Chocolate crackles recipe off the side of the Rice Bubbles box:

Ingredients:

  • 4 cups Rice Bubbles
  • 1 1/2 cups icing sugar, sifted
  • 1 cup desiccated coconut
  • 250 g Copha, chopped
  • 3 Tbsp Cocoa
  • 24 patty pans

Method:

  1. Mix the rice bubbles with the icing sugar, cocoa and coconut in a large mixing bowl.
  2. Slowly melt the copha in a span over low heat, allow to cool slightly, then stir gently into the rice bubbles mixture, mixing all ingredients well.
  3. Using 2 tsps, spoon the mixture into the pattypans. Place each chocolate crackle on a tray and refrigerate until firm.
