Chinese Chicken & Corn Soup - from Ali

Ingredients:

  • 1 pkt Continental Salt reduced Chicken Noodle Soup Mix
  • 3 cups water
  • 1 x 425gm can creamed corn
  • 1 egg, beaten
  • 1/4 cup sliced spring onions

Method:

  1. Place soup mix, water and corn in a saucepan, bring to the boil and simmer for 5 minutes.
  2. Add egg in a thin stream stirring continuously.
  3. Add shallots and reheat gently.
  4. Serve hot with damper bread.
  5. Serves 4
