Ingredients:
- 1 cup sugar
- 2 tablespoons butter
- 1 cup sultanas (raisins)
- 1 cup currants
- ¼ teaspoon salt
- 2 cups water
- 2 tablespoons coconut
- 1 teaspoon mixed spice
- 1 tablespoon cocoa

Method:
- Combine all ingredients into a saucepan and bring to the boil very SLOWLY.
- Take off stove, and put mixture into a large bowl, then add 1 teaspoon baking soda. Let stand for about 10 minutes.
- Add 2 cups sifted self-raising flour and mix together.
- Grease deep round or square cake pan. Line base and sides with paper and grease again.
- Bake at 350 F for about 1 ¼ hours.
