Beef Barley Soup - from Adele
Ingredients:
  • 2lbs of cubed beef
  • 1 cup of thin sliced celery
  • 2 cups of thin sliced carrots
  • 1/4 cup of chopped green peppers
  • 1 cup of diced onions
  • 1/2 cup of barley
  • 1/4 chopped parsley
  • 2 tsp salt
  • 3/4 tsp dried basil
  • 2 tbsp ketchup
  • 3 beef bouillon cubes

Method:

  1. Layer in crockpot - vegetables and meat then barley and remaining ingredients.
  2. Cover with 5 cups of water. DO NOT STIR.
  3. Cook on low for 9-11 hours.
