Ingredients:
- 1 Leg of lamb, boned and fat taken off.
Make a marinade of:
- 1 cup red wine
- 1/2 cup soy sauce
- Splash of tomato sauce (ketchup)
- 5 crushed cloves of garlic
- 1 cup of chopped mint
- 1 tablespoon of cracked pepper

Method:
- Pour marinade over lamb and refrigerate overnight turning occasionally.
- Drain lamb and cook on grill for about 20 mins, basting frequently with reserved marinade.
- Check if lamb is cooked to your liking after about 1/2 hour.
- Slice and serve with salad & jacket potatoes.
