Barbequed Lamb - from Diane

Ingredients:

  • 1 Leg of lamb, boned and fat taken off.
Make a marinade of:
  • 1 cup red wine
  • 1/2 cup soy sauce
  • Splash of tomato sauce (ketchup)
  • 5 crushed cloves of garlic
  • 1 cup of chopped mint
  • 1 tablespoon of cracked pepper

Method:

  1. Pour marinade over lamb and refrigerate overnight turning occasionally.
  2. Drain lamb and cook on grill for about 20 mins, basting frequently with reserved marinade.
  3. Check if lamb is cooked to your liking after about 1/2 hour.
  4. Slice and serve with salad & jacket potatoes.
