Banana Fritters with Caramel Sauce - from Rose

Ingredients:

  • 1 cup self-raising flour
  • 1 egg, beaten
  • ¾ cup soda water
  • oil, for deep frying
  • 4 bananas, each cut into quarters
  • Icecream for serving
Sauce Ingredients:
  • 1 cup soft brown sugar
  • ½ cup cream
  • 3 ½ ounces butter, chopped

Method:

  1. Sift flour into medium bowl, make a well in center. Add egg and soda water all at once, stir until liquid is incorporated and batter is free of lumps.
  2. Heat oil in heavy-based pan. Dip bananas in batter a few pieces at a time; drain off excess batter. Gently lower bananas into moderately hot oil, cook over medium-high heat for 2 minutes or until golden, crisp, and warmed through.
  3. Carefully remove from oil with a slotted spoon, drain on paper towels. Serve immediately with caramel sauce and icecream.
  4. Combine all ingredients in a small pan and stir until sugar has dissolved and butter has melted. Bring to the boil; reduce heat, and simmer for 2 minutes.
